Alkaline Wet Noodle

Ingredient :

RAMA - RAMA 108 Wheat Flour 500 gram
Water 170 gram
Salt 7.5 gram
Alkaline 5 gram 

Method :

  1. Dissolve salt, alkaline in water.
  2. Place flour into mixing bowl.
  3. Pour the solution slowly into flour with slow mixing at speed 1.
  4. Scrape the mixing bowl.
  5. Continue to mix for 4 min at speed 2.
  6. Remove dough into a plastic bag.
  7. Using a rolling pin to press the dough in the plastic bag to make a rectangular block.
  8. Rest the dough for 10 min.
  9. Sheet the dough according to the settings shown on the noodle machine.
  10. Cut a final sheeted dough 2mm thickness (according to your desired thickness).
  11. Cook noodle in boiling water.
  12. Remove cooked noodles and rinse noodles in cold tap water.
  13. Coat the noodles with cooking oil to prevent it from sticking together
