Alkaline Wet Noodle
Ingredient :
RAMA - RAMA 108 Wheat Flour	500 gram
Water	170 gram
Salt	7.5 gram
Alkaline	5 gram 
Method :
- Dissolve salt, alkaline in water.
 - Place flour into mixing bowl.
 - Pour the solution slowly into flour with slow mixing at speed 1.
 - Scrape the mixing bowl.
 - Continue to mix for 4 min at speed 2.
 - Remove dough into a plastic bag.
 - Using a rolling pin to press the dough in the plastic bag to make a rectangular block.
 - Rest the dough for 10 min.
 - Sheet the dough according to the settings shown on the noodle machine.
 - Cut a final sheeted dough 2mm thickness (according to your desired thickness).
 - Cook noodle in boiling water.
 - Remove cooked noodles and rinse noodles in cold tap water.
 - Coat the noodles with cooking oil to prevent it from sticking together
