Pineapple Tart 

Pastry :

BAKERS' CHOICE FLOUR VIT EN 350 gm
Unsalted Butter 250 gm
Icing Sugar 88 gm
Egg Yolk 2 nos
Corn Flour 40gm

Pineapple Filling :

Pineapple (Grated) 1 nos
Brown Sugar 300 gm
Lime (Juice) 1 

Method of Making Pastry :

  1. Mix the unsalted butter and sugar, and gradually add in the egg yolks.
  2. Fold in the BAKERS' CHOICE VIT EN FLOUR and knead.
  3. Rest the pastry for 30 minutes in the chiller.

Pineapple Filling :

  1. Cook pineapple in hot pot at slow heat until dry at slow fire until dry.
  2. Add in brown sugar and lime juice, boil until thick and cool the filling for further usage.

Pineapple Tart :

  1. Roll pastry into thickness of 5mm.
  2. Stamp out pastry with pineapple tart mold.
  3. Put the filling in the center.
  4. Brush pastry with egg yolk.
  5. Bake at 180⁰C for 20 minutes.
  6. (Depends on the oven conditon)
