Egg Raw Noodle (Kolo Mee)
Ingredient :
Yellow Horse (N) Wheat Flour 500 gram
Water 115 gram
Egg 50 gram
Salt 5 gram
Alkaline 5 gram
Method :
- Dissolve salt, alkaline in water, pour in egg into the solution.
- Place flour into mixing bowl.
- Pour the solution slowly into flour with mixing at low speed (speed 1).
- Scrape the mixing bowl.
- Continue to mix for 4 min at speed 2.
- Remove dough into a plastic bag.
- Using a rolling pin to press the dough in the plastic bag to make a rectangular block.
- Rest the dough for 10 min.
- Sheet the dough according to the settings shown on the noodle machine.
- 1Cut a final sheeted dough 2mm thickness (according to your desired thickness).
- Warp the egg raw noodle in brown paper and keep in the refrigerator until ready to cook
- Cook noodle in boiling water.
- Remove cooked noodles and rinse noodles in cold tap water.
- Normally the noodles is coated with seasoning sauce and ready to eat with meat topping
